Sometimes referred to as "beef butter," this is a favorite cut of true beef aficionados. Because the cap must be hand cut from the exterior of the ribeye roast, it is extremely limited in supply. Exquisitely marbled and tender, this cut is simple to prepare and is phenomenal when grilled. Serves approximately 4. (approx. 18 oz.).
