Strip Loin Filet (10 oz.)
The short loin steak has many names: Strip Loin, Kansas City Strip, New York Strip, Hotel Steak and Strip Steak. Traditionally, this steak is cut so it is rather long and narrow and often thin. We prefer a thick, juicy steak and therefore we specially hand trim these steaks "filet" style. The result is an impressive presentation, while maintaing the intense flavor this cut is known for.
